Making Cabernet Sauvignon from Andy Beckstoffer’s famous George III vineyard is winemaking on hallowed ground. In 2016 we harvested fruit from both old and new vines, combining the energetic richness from young fruit with the finesse from older vines. Fermented and aged separately in French oak barrels for 28 months, the individual lots were brought together two months before bottling. Inviting aromas of ripe plumb, dark chocolate, and cinnamon. Tannins are velvet smooth and firmly frame the densely fruited, plush mouthfeel. The spicy finish lingers with notes of dark chocolate, fresh ground coffee, black fig and licorice.
