Winningen is their home base on the Mosel; this is where the winery is. All vineyards are steep sloped or terraced. The particular slate profile of Winningen is a grey-brown that also contains iron and other mineralic particles that slowly oxidise red and yellow. All vineyards are facing south or south-west.

Four to eight hour maceration on skins, natural settling by gravity, spontaneous fermentation, no chaptalization, no fining, no additions or reductions of any kind. The wine develops 11 months on the lees in stainless steel tanks; filtered and sulphured minimally before bottling.
