This still red wine is made from 100% Pinot Noir, sourced from a single vineyard in Ambonnay, located directly below the famed Les Crayres. The south-facing site, with its clay-rich soils, is ideal for Coteaux Champenois, and the vines are over 60 years old. Farmed with practicing organic methods, the wine is fermented with indigenous yeast and aged in barrel (30% new) for 22 months. It is bottled by hand directly from the barrel, unfined and unfiltered, to preserve its purity and expressive character.
