Certified organic, practicing biodynamic. As there are no neighbors and the vineyard is completely enclosed, it is the ideal site for farming biodynamically since outside chemicals and sprays will not inflitrate the vineyard. It is for this reason that the Clos de Chateau is home to all of De Montille’s biodynamic trials and experiments.
VINIFICATION
Fermented in demi-muids. Regarding sulfur, whites have the following: 75-100 mg/l total SO2, 30-35 mg/l free SO2.
AGING
Aged one year in demi-muids, then blended and aged another 5 months in stainless steel.
NOTES
Referred to by Etienne De Montiille as “mon chou chou”, a term of endearment meaning “my favorite”, the Clos du Chateau is a nervier step up from the Bourgogne Blanc and clearly portrays the qualities of it’s home of Puligny. Truly one of the great values of this prime village.
