Thomas Pico’s naturally-farmed and -produced wines are the essence of Chablis, but not only in their briny minerality. There is a sense of vitality to the wines, and a textured density that can only come from dedicated work in the vineyards and transparent winemaking. Matured on the lees for 30 months, It has aromas of clear honey, beeswax and pear. Medium to full-bodied, satiny and layered, with racy acids and a long, sapid finish, it shows unusual depth and dimension for the vintage. Leesy and noticeably peppery toward the finish.
