The grapes were destemmed and slightly crushed then sent to the vertical press where they were gently pressed. Fermentation occurred at l ow temperatures–approximately 60?Farenheit–and the wine remained on the lees for about three months. Total aging was 4 to 6 months in cement tanks to preserve the full fruit character.
